Buried Treasure


- a smoked trout take on the classic cauliflower cheese

Serves: 3 - 4 smaller children or 2 big ones

Per serving:
485 Kcal; 36g fat

Ingredients:

175g/6oz hot smoked trout fillets
225g/8oz cauliflower, cut into florets
225g/8oz broccoli, cut into florets
500ml half fat crème fraîche
175g/6oz mature cheddar cheese, grated

( fresh trout fillets can substitute for the hot smoked trout )

 



Buried Treasure

Method:

Preheat the oven to 190C (375F/Gas mark 5).

Place the trout fillets in a medium sized shallow baking dish.

Meanwhile steam or boil the cauliflower and broccoli florets in a pan of boiling salted water for 7-10 minutes, until just tender. Drain and place on top of the trout.

In a medium bowl mix together the crème fraîche and most of the cheese. Spread this over the vegetables, and then sprinkle over the remaining cheese.

Place in the oven and bake for 15-20 minutes or until the top is golden.

Serve with crusty bread.

Cook’s Note:

If your children do not like the taste of crème fraîche, you can use a conventional cheese sauce for this dish.
