Trout Fillets with a Walnut & Stilton Crust

Trout Fillets with a Walnut & Stilton Crust combines familiar flavours effortlessly in this quick and tasty supper.

The trout and walnuts ensure that this dish is packed with omega-3 oils. A host of scientific studies point to the increased consumption of Omega-3 oils (EPA & DHA) as reducing the risk of depression, with a 1998 study published in The Lancet concluding that higher fish consuming populations experienced less depression.

One of the oldest foods, walnuts today are recognised for their flavor, versatility and health benefits. Among tree nuts, walnuts are distinctive because of their concentration of omega-3 fatty acids. Walnuts also contain a host of other important vitamins, minerals, protein and antioxidants.

Trout Fillets with a Walnut & Stilton Crust
Serves 4
443 kcal per serving; High in protein and fat, Low in carbohydrate

Ingredients:
4 trout fillets
4 tbsp chopped walnuts
100g/ 4 oz blue cheese, preferably Stilton
4 tbsp fresh breadcrumbs
Seasoned flour for dusting
Egg wash

Method:
Crumble or roughly grate the blue cheese. Mix with the walnuts and breadcrumbs.

Dip the flesh side of each fillets in flour and then the egg wash. Coat with the cheese and walnut mixture.

Cook under a pre-heated grill for 4-5 minutes until bubbling and golden.
Serve with salad, or your favourite seasonal vegetable.
