Spice up your Friday night with a delicious fakeaw

Spice up your Friday night with a delicious fakeaway recipe! These Green Curry Trout Parcels are healthy, packed with flavour and super easy to make.

Green Curry Trout Parcels
serves 4

4 whole British trout, cleaned
2 limes, 1 zested and juiced
2 lemongrass stalks, halved lengthways
Thumbsized piece ginger, sliced
4 cloves garlic, sliced
Bunch coriander
Bunch thai basil or regular basil
400ml coconut milk (use reduced fat if preferred)
2 tbsp green curry paste
1 tbsp fish sauce
1 red chilli, deseeded and sliced

Heat the oven to 200C, 180C fan, gas mark 6.

Cut 4 large pieces of wide foil, which will wrap each trout completely and lay out on a work surface. #
Place a trout on each piece of foil.
Stuff the cavity of the fish each with half a lemongrass stalk, slices ginger, slices garlic and a few sprigs of coriander and Thai basil.
Whisk the green curry paste, lime zest and juice and fish sauce into the coconut milk, then divide between the fish.
Wrap up the parcels tightly, place on a baking tray and bake for 20 minutes, or until cooked through.
Open the parcels and scatter over the sliced chilli and more coriander and Thai basil.
Serve with jasmine rice.

St George's Day marks the start of the British asp

St George's Day marks the start of the British asparagus season. We can't think of a better food match than with another locally produced fave - trout! They are the ultimate foodie BFF's!

Give this tasty combo a try with this recipe:

Baked Trout with Lemon, Pepper and Black Garlic
Serves 4

4 British trout fillets
400g asparagus, trimmed of woody ends
3 tbsp olive oil
20 pieces Original Black Garlic
½ tsp salt
1 tsp pepper
1 lemon, sliced

Preheat the oven to 200C

Line a baking tin with parchment paper.
Place the trout fillets skin side down in the centre of the tin and brush with half of the olive oil.
Coat the asparagus in the remaining oil and place all around the trout in the tin.
Sprinkle the trout and asparagus with salt, pepper and black garlic.
Top with lemon slices.
Bake for 15 minutes or until the trout is cooked through.
Remove from the oven and remove the lemon slices.
Serve and enjoy.
